Mary Daly & Associates are FETAC and FAS approved educational providers. All our trainers are licensed and experienced in their specialized fields. We deliver training on behalf of Failte Ireland, FAS, Skillnets and a number of national and international clients. Food Safety/HACCP – Level 1 -
This is a basic food safety course that has to be completed by anybody handling food during the course of their work. This course is naturally perfect for catering staff but is also very suitable for front of house staff that serve clients. Over 2.5 hours, our licensed trainers cover Personal Hygiene, Temperature Control, Record Keeping, Waste Management, Legal responsibilities and Food Traceability. This course is based on the Food Safety Authority Guidelines; Level 1. Training materials are available in twelve different languages. Class size up to 15 persons.
The FSPA Food Safety & HACCP – Level 2 – NEW!
This day long course is certified by the Food Safety Professionals Association, and is designed to meet the needs of today’s busy food operatives. This course is ideal for food operatives within the Catering, Hospitality, Industrial, Retail and Artisan food sectors.
The Primary Course in Food Hygiene – Level 2
This is day long course covering ten modules on Food Safety, including an introduction to HACCP. At the end of the course there is a multiple choice exam paper. The course has been designed and is certified by the Environmental Health Officers Association (EHOA).
The Management of Food Hygiene in the Hospitality Industry – Level 3
This is a four day course certified by the National Hygiene Partnership (NHP). It is the most advanced food safety course available and is very highly regarded in the catering industry. Candidates who receive a distinction on this course can proceed through the necessary steps to become hygiene trainers.
FETAC Level 4, Food Hygiene, Code L12207
FETAC Level 4 Food Hygiene will give participants knowledge in the principles of Food Hygiene and help them to develop good hygiene practices. The course is suitable for all food operatives, i.e. Retail, Hospitality, and Industrial & Health Care. It also conducted for non food workers who have an impact on food safety.
FETAC Level 5, Food Safety & HACCP Code N22795
FETAC Level 5 Food Safety & HACCP will give participants knowledge of best practice for Food Safety and HACCP implementation and operation.
This half day course is new to Ireland. In other EU states it has been acknowledged that more people die from allergic reactions than Food Poisoning. It is imperative that catering and service staff are familiar with the common allergens and in what food stuffs they are found. Staff must be aware of how to handle, segregate, prepare and inform clients of allergens. This course is interactive and supported by a DVD, photographs, menus etc. Course fee €100
Social Skills & Active Listening (Customer Care)
Have we forgotten our manners? This 2.5 hr class covers the courtesies required in good Customer Care. Acknowledging & Greeting our clients & fellow workers, Dress & Grooming, Telephone Techniques, Complaint Handling/Problem Solving, being Polite, Professional & Prompt. This interactive course involves role playing & problem solving. (We can also offer a more detailed Customer Care course with FETAC certification.)
Nutrition/Menu Design & Food Cost Control
The reasons for a varied and balanced diet for our clients, planning meals and preparation of food. Breakfast ideas, Luncheon menus and recipes. Soups, dessert and snack ideas. Special diets and nutrition requirements. Food Cost Control includes not only wise budgeting but also the delicious use of leftovers. Cooking with the seasons and balancing costs throughout a meal. Managing waste and growing your own herbs and leaves simply. Learning how to cost a meal. Our experienced Head Chef shares her many tips throughout this day long course.
Train the Trainer (FETAC Level 6)
This 5 day course must be delivered over a two week period or more due to the detail covered. The course is divided between Group Training Techniques & Operational Training Techniques. Group training prepares potential trainers with the skills to deliver theory based material in a logical & interesting manner. Operational training equips a trainer to teach a skill or craft. It is an ideal course for Catering Supervisors/Kitchen & Restaurant Managers. Class size must be limited to a maximum of 8 persons.
Fire Training Programme
Training consists of an informative lecture, two video presentations and hands on use of Fire Extinguishers using our replica home and office equipment. These units give personnel the opportunity to train in the correct application of Portable Fire Extinguishers. All of the demonstration models are fired by propane gas, which is environmentally friendly, eliminates the necessity for burning petrol and diesel and are much safer than old Fire Training methods.
Training consists of Informative Lecture – Principals of Fire, Prevention and Causes of Fire, Statutory Requirements, Work Safety Evacuation Procedures & Home Safety. Video Presentations -”Tackling Fire Safely” &”Front Room Fire”. Practical Demonstration – Hands on use of Fire Extinguishers using our replica home and office equipment (This part of the programme is outdoors and lasts about 15 mins. The fires are safely monitored and relatively clean.)
All necessary equipment will be provided i.e. Fire Extinguishers, Fire Blankets, Power Point Projector, and Laptop Computer etc.
Sessions last approximately 90 minutes and all participants receive a certificate and information booklet.
Manual Handling Training
A legal requirement for your staff. Teach them how to lift and carry properly. We take up to a maximum of 12 persons on our intensive 2 hour course. €450 per course with certification.
Health and Safety Seminar for the Management Team
An excellent, detailed but practical course for all managers with a responsibility for Health and Safety in the workplace. On going training is required in Health and Safety, know your legal responsibilities and be prepared for the HSA inspector!
